The amount of soaking and cooking time is highly dependent on the freshness of the beans.
Because Community Grains beans are very fresh we usually say you don’t have to soak as long (or if you are up for a slow cook in the oven, you can forgo soaking completely), over night or even 6-8 hours (while you’re at work) should be enough. As a general rule, the longer you soak the shorter your cooking time will be. We recommend to start to check for done-ness around the one hour mark.
Soak over night or use flash boil method
Discard soaking water
Cook gently in 2 quarts of water until done (1 t0 2 hours)

4-5 sage leaves
a few tablespoons of olive oil
3-4 cloves crushed garlic
