Meatless Monday Black Valentine Tostadas

Community Grains Black Valentine beans, combined with rice and your favorite tostada toppings, make a super easy and surprisingly satisfying dinner option. You can even make a big batch, then freeze half for later – if you can stop yourself from eating the whole pot at once.

Black Valentine Tostadas
Serves 4

Ingredients

1 lb Community Grains Black Valentine Beans
3-4 cloves
4-5 black peppercorns
2 cloves crushed garlic
2 tbsp olive oil
1 bay leaf
pinch of sea salt
Your favorite toppings: guacamole, salsa, cotija cheese, tomatoes, grilled veggies…
tostada shells or tortillas for serving

Directions

Soak Black Valentine beans overnight, or use a quick-soaking technique.

Discard soaking water. Cover beans with enough new water to cover by 3 inches.

Add peppercorns, olive oil, bay leaf, sea salts, and crushed garlic. Gently simmer for 1-2 hours, until beans are tender.

Heap scoopfuls of beans onto tostada shells and top with your preferred toppings – guacamole, salsa, cotija cheese, grilled veggies, radishes, cucumbers, lime juice, salsa, cilantro….and enjoy!
