Torie’s Pasta Salad

Every time we do a demo we always make Torie’s pasta salad.  It’s delicious and vegan and just about every single person who sampled this asked for the recipe.  So viola!

Torie’s Pasta Salad
Serves 2-4

14 oz. (1 box) Community Grains Hard Amber Durum Fusilli
1/4 cup olive oil
Juice of 2-3 lemons
2 2/3 tablespoons apple cider or balsamic vinegar
1/4 tbsp cracked black pepper
1 tbsp salt (to taste)
1/2 cup chopped fresh parsley
14.5 oz diced or chopped tomatoes
2 cups cooked Community Grains Black Valentine or Snow Cap Beans


Add pasta to rapidly boiling salted water. Stir to separate. Cook al dente – 7 to 9 minutes.  Drain pasta when it is just done – don’t overcook.  Set in refrigerator to cool for 15-20 minutes (Very important step! Do not skip!)

In a bowl, mix olive oil, vinegar, lemon juice, pepper, salt, and chopped parsley with diced tomatoes. Once pasta has cooled for 15-20 minutes, toss mixture with pasta (if using beans, also add them).  Serve chilled.
